Ingredients

  • Veal:

    • 1 lb (450 g) veal cutlets or veal stew meat
    • Salt and black pepper, to taste
    • 2 tablespoons all-purpose flour
    • 2 tablespoons olive oil or unsalted butter
  • Mushroom Sauce:

    • 2 tablespoons unsalted butter
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup mushrooms (cremini, button, or a mix), sliced
    • 1/2 cup white wine (optional)
    • 1 cup beef or chicken broth
    • 1 cup heavy cream
    • 1 tablespoon Dijon mustard (optional)
    • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
    • Salt and black pepper, to taste
    • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Veal:

    • Season the veal with salt and pepper. If using veal cutlets, lightly pound them to an even thickness.
    • Dredge the veal in flour, shaking off any excess.
  2. Cook the Veal:

    • Heat the olive oil or butter in a large skillet over medium-high heat.
    • Add the veal and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the veal from the skillet and set aside on a plate, covering with foil to keep warm.
  3. Make the Mushroom Sauce:

    • In the same skillet, add the butter and let it melt.
    • Add the chopped onion and cook until softened, about 3 minutes.
    • Stir in the garlic and cook for an additional minute until fragrant.
    • Add the sliced mushrooms and cook until they’re browned and tender, about 5-7 minutes.
    • If using wine, pour it in now and let it simmer for 2-3 minutes, allowing the alcohol to evaporate and the wine to reduce slightly.
    • Pour in the broth and bring to a simmer. Let it reduce for about 5 minutes.
    • Stir in the heavy cream and thyme, and continue to simmer until the sauce has thickened slightly, about 5 minutes.
    • If desired, whisk in the Dijon mustard for added flavor. Adjust seasoning with salt and pepper to taste.
  4. Combine and Serve:

    • Return the veal to the skillet and spoon some of the sauce over it. Simmer for a few minutes to let the veal heat through and absorb some of the sauce flavors.
    • Garnish with chopped parsley before serving.
