Veal:
- 1 lb (450 g) veal cutlets or veal stew meat
- Salt and black pepper, to taste
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil or unsalted butter

Mushroom Sauce:
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms (cremini, button, or a mix), sliced
- 1/2 cup white wine (optional)
- 1 cup beef or chicken broth
- 1 cup heavy cream
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme

Prepare the Veal:
- Season the veal with salt and pepper. If using veal cutlets, lightly pound them to an even thickness.
- Dredge the veal in flour, shaking off any excess.

Cook the Veal:
- Heat the olive oil or butter in a large skillet over medium-high heat.
- Add the veal and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the veal from the skillet and set aside on a plate, covering with foil to keep warm.

Make the Mushroom Sauce:
- In the same skillet, add the butter and let it melt.
- Add the chopped onion and cook until softened, about 3 minutes.
- Stir in the garlic and cook for an additional minute until fragrant.

- If using wine, pour it in now and let it simmer for 2-3 minutes, allowing the alcohol to evaporate and the wine to reduce slightly.
